Sodium Erythorbate

Sodium Erythorbate is a food additive used predominantly in meats, poultry, and soft drinks. It is an antioxidant and helps improve flavour stability. Sodium Erythorbate is soluble in water. In its dry, crystalline state it is nonreactive but, in solution with water, it readily reacts with atmospheric oxygen and other oxidising agents, which gives it its useful antioxidant qualities.
