Propylene Glycol Alginate

Propylene Glycol Alginate (PGA) is used in place of Sodium Alginate in acidic emulsions since it is stable in mild acid conditions. It is an emulsifier, stabiliser, and thickener used in food products and is made by processing alginates extracted from natural algae. It is widely used in fruit juice, salad dressing and beverages and is an efficient stabilising agent in acid protein beverages.
