Citric Acid Anhydrous/Monohydrate

Citric acid is a weak organic acid used as a natural preservative and to add acidic, or sour, taste to food and soft drinks. It has applications as an emulsifying agent in ice cream and in preventing sucrose crystallisation in caramel, or in recipes in place of fresh lemon juice. Blagden can supply citric acid in anhydrous (water-free) form, or as a monohydrate.
